Having trouble figuring out how much spinach to plant!

Missing tomato plant
I could just cry this morning. I cover up my tomatoes last night with some old shirts as the weather called for frost. When I went to take them off this morning, the edge of one was brushed aside and one of my tomatoe plants was GONE!!!! Just a poor stem
Can I plant anything now?
I have 8 12x12 spaces from potatoes and 5 12x6 in another bed. Is there anything I can plant now? What could I plant and have winter over? I want to keep it veggies/fruit- I have enough flowers! I've had okay success with my first garden.

Toured Forest River Oregon Plant
Yesterday we toured the manufacturing plant for Wildcat in Oregon. It was a very nice tour lasting about an hour. Got a chance to see just how these trailers are put together. ItÂ’s amazing how it just starts with the frame and from station to station
